Sanitation Checklist

An important but often over looked part of the restaurant business are the health and sanitation issues. It’s crucial to keep a clean and healthy work place, not only for your employees but for your customers as well. 

Use this 
below list
 to create your own sanitation checklist:

BUILDING

  1. Do you have adequate lighting inside and out?
  2. Are the floors and 
carpets 
are 
properly 
secured and not 
a 
tripping hazard?
  3. Fix any painted ceilings or walls that are cracked or hanging.
  4. Are drain covers secured properly?
  5. Hire a professional cleaning business to clean your kitchen hood system. The ventilation system needs to be checked and cleaned regularly.

FOOD HANDLING 

  1. Proper hand hygiene before eating, after using the restroom, and before and after food preparation is critical. Don’t forget to post all required signage.
  2. Are employees wearing the proper dress code – hairnets, gloves, aprons – during their shifts?
  3. To prevent cross-contamination, food prep areas need to be kept clean with the proper sanitizing solution including all cutting boards.
  4. Never allow smoking 
in 
food 
handling 
areas.

EQUIPMENT & DISHES

  1. Is the dish machine operating at the correct temperature with the proper chemicals?
  2. Double-check glassware, plates, and silverware. Are they being cleaned and stored properly? Watch the procedures of the dish room from time to time.
  3. Use a checklist to ensure staff properly breaks down and cleans all equipment at closing.
  4. Is there sanitation solution with cleaning towels at each station in the kitchen and pre areas?
  5. Are ice bin scoops and buckets properly stored?

RESTROOMS

  1. Wipe down all floors, walls, stalls, and mirrors.
  2. Make sure all restroom supplies and toiletries are fully stocked.
  3. Don’t forget to use 
the 
”wet 
floor” 
sign
 after 
any 
floor 
has 
been 
mopped. Leave the sign in place until the floor has completely dried.
  4. To ensure restrooms are kept spotless, use a checklist for cleaning procedures and check it every hour. Customers relate the cleanliness of your restrooms to the cleanliness of your kitchen!

GARBAGE


  1. Are their sufficient garbage containers with the proper fitting lids?
  2. Ensure the area around the garbage container is kept cleaned at all times.
