Warm Up! With White Chicken & Chorizo Chili

White Chicken & Chorizo Chili
Perfect for Game Day or a cold night!
10 lbs Chicken diced (#710183)
5 lbs Chorizo (#650008)
2 #10 White Beans (#202033)
2 Qts.Chicken Broth (#242040)
4 cups shredded Monterey Jack (#430067)
1 bunch Cilantro (#510324)
1 Chopped Red onion
4 cups Corn
Olive Oil
1 T Cumin
2 T Oregano
2 Bay Leaves
1 teaspoon Cayenne Pepper
1 lg White Onion chopped
2 Cups Chopped Green Chili Peppers
6 Garlic Cloves, Smashed
1 Teaspoon Coriander
Salt & Pepper to taste
Directions
Sauté onion and garlic in a heavy pot with olive oil for about 5 minutes. Add your spices and green chili peppers, cooking for another 5 minutes.
Next, add the chicken, chorizo and broth. Bring to a simmer. Lower heat and cover. Cook about 30 minutes, until meat is cooked through.
Turn off heat and remove meat to cool.
Shred chicken, chop chorizo, add white beans and the corn. Cook for an additional 30 minutes.
Serve and garnish with cheese, cilantro, and chopped red onion.
