Sandwich Day Special: Roast Beef

In honor of National Sandwich Day, our Meat Specialist, Bill Howell, is whipping up a top-notch signature dish, the roast beef sandwich. Bill is using a USDA Choice Beef Sirloin Ball Tip 2 and up. This item comes from the Beef Bottom Sirloin, with the weight ranging from 2 to 3.5 lbs and about 5 to a vac.

Bill likes to season with kosher salt and course pepper the day before. He then places in a roasting pan, covers with foil and sets the oven to a low 250 degrees. He pulls the meat at 125 or 130 degrees and chills.

Finally, Bill sautés onion, celery and carrots in the drippings from the roast, then adds beef broth to make a dipping stock with a heavenly aroma.

To top if off, Bill slices the beef thin and dips into the hot broth. For the perfect sandwich, serve on a great bun, like brioche, and with a spunky pickle, like horseradish flavored.
